Tasting note: Lighter in colour, due to the style of winemaking. Berry bouquet on the nose, followed by a complex, well balanced and light palate with flavours  of cherry, cinnamon spice and plum.

Food suggestion: Goes well with cold meat, charcuterie, exotic cheeses and light meat dishes. Can also be cooled down and enjoyed on a lovely summer’s eve.

In The Vineyard

Grapes were sourced from a cross section of regions selected for optimal expression of each varietal. Vineyard tactics included pruning to two-bud spurs, shoot removal, bunch thinning and canopy management to best ripeness and quality.

The Harvest

Each block of grapes were intensely monitored to determine optimum ripeness. The grapes were hand-picked separately in the early morning and cooled down prior crushing.

In The Cellar

Bunches sorted, destemmed and berry sorted on vibration tables. The berries were gently crushed into stainless steels tanks and deposited separately in open fermenters. The must was given a cold soak of 4 days at 9 °C protected by a CO2 blanket.
