Tasting note: The highly aromatic and fruit forward nature of the grape allows this wine to pair well with spicy foods such as Thai cuisine or Vietnamese cuisine
Food suggestion: Rich cheeses, full-flavoured and creamy and saucy food. Particularly compliments chicken, duck, sushi and line fish.
In The Vineyard
Grapes were sourced from a cross section of regions selected for optimal expression of each varietal. Vineyard tactics included pruning to two-bud spurs, shoot removal, bunch thinning and canopy management to best ripeness and quality.
Each block of grapes were intensely monitored to determine optimum ripeness. The grapes were handpicked separately in the early morning and cooled down prior crushing.
In The Cellar
Stainless steel tank fermentation and reductive wine making are followed. All components are then blended in different ratios until we are satisfied that we have the final blend that meets the winemaker’s style.
